Best mode for transmitting on 6 and 10 meters?

I’ve been listening to shortwave for years, but know very little about transmitting. Which mode is best for both listening and transmitting on the 6 and 10 meter bands? (I know that NFM or FM is used for listening/transmitting voice on 2 meters. But what about these others?). Thank you.

(Edited to clarify that I am referring to voice transmission modes).
